Johor bahru: Amid the bustling stalls at the Angsana Ramadan Bazaar, rows of colourful trays filled with nasi ambeng and traditional Javanese dishes quickly drew visitors looking for a unique iftar experience. This standout offering comes from Nasi Ambeng Wan Mahdam, which is served on decorative trays, not just for presentation, but to revive the traditional communal way of enjoying the meal.
According to BERNAMA News Agency, Mohd Irwan Mahdam, 40, owner of Wan Mahdam Catering and Events, introduced the concept two years ago after observing that the dish, despite being a Johor culinary staple, was rarely highlighted at Ramadan bazaars. In the authentic Javanese tradition, nasi ambeng is eaten with hands directly from the trays. Mohd Irwan said they preserve this tradition by wrapping the food carefully in plastic and providing easy transport options. Customers can also enjoy the meal at the stall, which offers tables and a space for sitting cross-legged.
The Batu Pahat native explained that each tray set is sold for RM30, suitable for two to three people, and includes ayam sambal, ayam kicap, and beef rendang, served with two portions of white rice, black pepper soy noodles, serunding, salted fish, cucumber, and sambal goreng. Customers have the option to select their preferred tray design, and trays can be returned for a RM2 to RM3 refund, although most choose to keep them.
Mohd Irwan noted that last year, they sold around 500 tray sets throughout Ramadan and have set a target of 1,000 sets for this year. In addition to Angsana, he also operates in Kampung Melayu Majidee, employing five staff at each location. Having been in business since 2012, Mohd Irwan shifted from selling nasi briyani to nasi ambeng, recognizing its broader appeal and closer alignment with local tastes.
A customer, Nur Ainatul Shuhada Tahar, 37, shared her initial impression, noting that she initially thought the tray her husband brought home last year was from a mosque. She expressed her appreciation for the unique experience, praising the delicious dishes and the option to choose a personal tray.
